Ailis’ Mexican Dip
Ingredients:
2 cans refried beans
1 small chopped onion
2 ripe avocados
1 cup sour cream
1 package taco seasoning
1⁄2 pound cheddar cheese
shredded lettuce, cabbage, peppers chopped tomatoes
chopped black olives

Mash and spread refried beans in a 9 x 13 glass dish. Mix in onion, taco seasoning, and tomato
juice to make it spread easily. Mash avocados and spread on top. Layer sour cream which has
been mixed with some taco seasoning. Sprinkle cheese, then lettuce, cabbage, peppers,
tomatoes, and black olives. Serve with corn chips for dipping.

Two 6 oz. jars marinated artichoke hearts 1 small onion, finely chopped
1 clove garlic, minced
4 eggs
1⁄4 cup dry bread crumbs
2 tablespoons minced parsley
1⁄4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon Tabasco sauce
1⁄2 lb. shredded cheddar cheese
1/8 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon Tabasco sauce
1⁄2 lb. shredded cheddar cheese
Drain the juice from 1 jar of artichokes into a fry pan. Discard juice form second jar. Chop
artichokes and set aside. Sauté onion and garlic in liquid until transparent. Beat eggs in small
bowl; add breadcrumbs, salt, pepper, oregano & Tabasco. Stir in cheese, parsley, artichokes &
onions. Put in buttered 7 x 11” baking pan. Cook for 30 minutes at 350o F. Let cool in pan. Cut
in 1” squares. Serve cold or reheat 325o for 10-12.
Last Thanksgiving Uncle Ed rented a condo at Waterville Valley, NH. We all brought food for the feast. These artichoke squares were easy to make at home and transport in their pan. Everyone loved them!

Stuffed Mushrooms
24 very large mushrooms
4 tablespoons minced onion
4 tablespoon Parmesan cheese 1 teaspoon salt
1⁄4 teaspoon pepper
1⁄2 teaspoon paprika
2 teaspoon chopped parsley 3 tablespoon olive oil
1⁄2 teaspoon paprika

Wash and dry mushrooms. Chop stems and mix with onions, cheese, salt, pepper, paprika,
parsley and 1 tablespoon olive oil. Fill mushrooms with mixture. Grease flat baking dish with
remaining oil; add mushrooms and bake at 375o F oven about 15 minutes. Serve warm.

Meme and I would talk as we cooked together. Meme made me feel special as she complimented me on what I could cook well. I have many happy memories of cooking with my mother in her kitchen.

Crostini
1 French baguette Olive oil
Pizza Spread
Mix in blender:
1 can tomato paste olive oil
water
1⁄2 cup chopped tomatoes
minced fresh garlic
shake: oregano, basil, salt & pepper
Roasted Red Pepper Spread
Mix in blender:
1 minced scallion
1 jar (7 oz.) roasted
red peppers, drained
1 small garlic minced
1 tablespoon olive oil
1 teaspoon fresh lemon juice salt & pepper

Oatmeal Bread
This recipe can be adapted for 1 loaf, (2 loaves), and *3 loaves.

Mix in a large bowl:

To make in bread machine: Make 1 or 2 loaf recipe. Put wet ingredients in first, then dry, with powdered yeast on top. Cook as directed for your machine.
I learned how to make this bread when Jim and I sailed aboard "Pampero” in the Exuma Islands (Bahamas). We stayed with our friends; Ethan and Trudy Bixby, who were living on their boat. Everyday I helped Trudy make this bread in the galley using a pressure cooker.

Rhubarb Brunch Cake
Mix: 1 pkg. Yellow cake mix
1 cup water
1/3 cup oil
3 eggs
4 cups sliced rhubarb
1 cup sugar
1 pint (2 cups) whipping cream
1 cup sugar
1 pint (2 cups) whipping cream
Pour the dough mixture into a 13 x 9 inch greased & floured pan.
Top with rhubarb. Sprinkle with sugar. Pour cream over the top.
Bake 350o for 1 1⁄4 -1 1⁄2 hours. Store in refrigerator.
Meme makes this with rhubarb from the Centre Farm garden. It can be served for brunch, breakfast, dessert, or whenever. Great taste of rhubarb!
Meme’s Irish Bread (“Brack”)
Put 4 cups sifted flour in a mixing bowl. Add 1-tablespoon baking powder
1⁄2-cup sugar 1⁄4-teaspoon salt 1-tablespoon shortening
Blend.
Add: 1⁄2-cup raisins
1⁄2-cup currants
1-tablespoon caraway seeds (optional)
Beat together and then add to above:
2 cups milk
1 egg
Pour into one greased round pan or loaf pan or two small loaf pans. Sprinkle top with sugar.
Bake 350o F for 50-60 minutes.
Every St. Patrick’s Day we make this scrumptious bread. We prefer it to the many versions of Irish Bread made with baking soda. This bread is so good plain, but try it toasted with butter for a special treat. I do not know why we don’t make it more often.

1/2 cup whole cranberry sauce 1/2 cup orange marmalade
2 teaspoon Baking Powder 1/4 teaspoon baking soda

2/3-cup sugar
1/3 cup shortening

1 cup mashed bananas

Blend flour mixture and fruit mixtures alternately to creamed mixture until smooth.
Grease 8 1/2 x 4 1/2 x 3 " pan.
Bake 1 hour 10 minutes at 350 degrees F.
A slice of this bread with a pottery mug of coffee or tea is a delight.

Mix:
1 cup applesauce
1/2-cup orange juice
1 egg beaten lightly
3 tablespoons melted butter
Add:
2 cups flour
2 teaspoons baking powder 1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup nuts or raisins
Bake at 350
1 hour
13 x 4 " loaf pan

Banana Bread
Cream:
1 cup sugar
1/2 cup shortening
Add:
2 eggs
3/4 cup mashed banana
Sift and add:
1 1/4 cup sifted cake flour 3/4 teaspoon baking soda 1/2 teaspoon salt
Loaf pan.
350 F
35-45 minutes

English Muffin Loaves
Combine:
5-6 cups flour
2 pkgs. dry yeast
1 tablespoon sugar
2 teaspoon salt
1/4 teaspoon baking soda
Heat liquid till very warm (120 - 130 degrees):
2 cups milk
1/2 cup water
1/2 cup water
Add liquid to dry ingredients. Beat well. Stir in enough more flour to make a stiff batter.
Spoon into 2 8 1/2 x 4 1/2 pans which have been greased and sprinkled with cornmeal.
Cover. Let rise in warm place for 45 minutes. Bake 400. for 25 minutes. Remove from pans
immediately and cool. To serve, slice and toast. Makes 16 slices per loaf.
Gramma Betsy Watson used to make this often and bring it when she and Grampa came to visit us.
Galehead Buttermilk Pancakes
Mix together wet ingredients: 1 cup buttermilk
1 egg
3 tablespoons melted butter
Mix together dry ingredients:
3⁄4 cup all purpose flour (or try rice flour) 1⁄2 teaspoon salt
1 teaspoon baking soda
Mix wet ingredients with dry ingredients, leave lumps. Cook on hot griddle.
Grant made these for us in Utah one time. They are scrumptious. We also like the recipe in Joy of Cooking. When we use a mix, we prefer Krusteaz which Jim first cooked with in Oregon. Pancakes are a real favorite of ours. We like them with fruit mixed in the batter. Fresh blueberries picked in Dogtown are the best, but cut up bananas or peaches or apples, are good too. We love real maple syrup as a topping. We also like vanilla yogurt or flavored yogurt on top of pancakes.
Gramma Betsy Watson used to make this often and bring it when she and Grampa came to visit us.

Blend just til mixed, don't overdue!
knead 6 times
Spread out til 1/2 " thick. Butter it with butter and sprinkle with brown sugar. Sprinkle lightly with cinnamon. Roll it up like a jelly-roll. Slice off about 1/2 " thick. Place on ungreased cookie sheet close together but not touching.
Bake 400 12-15 minutes
This is a Breezy Brae, Baddeck,N.S. family favorite for us.

a large chopped onion
2 cups of chopped sausage,linguica (recently I've bee using the light Kielbasa)
Add: 2-3 cups chopped potatoes 2 cans of kidney beans
and enough water to cover all the ingredients.
Cook the soup for 1 hour on low heat. Be careful not to overcook the potatoes.
Add a bunch of chopped kale near end of cooking. Be careful not to overcook the kale. Portuguese Soup is great served the day it is cooked and/or after it sits a day or two.
My mom learned this recipe from her Portuguese uncles. This was a family favorite when I was growing up and is now a Watson family favorite.

3 cups Common Crackers Pepper – NO Salt
Grease baking dish. Crumble crackers to cover bottom of pan. Spread a layer of oysters. Add another layer of crackers. Repeat again. Mix butter with milk. Pour to fill pan covering all crackers. Pepper. Bake at 350. For 40 minutes.
No Thanksgiving feast at Centre Farm was complete without Meme’s oyster casserole. The common crackers required in this recipe might be hard to find. Meme and Grampy used to get them in Vermont. The crackers are plain and chunky which gives a nice background for the flavor of the oysters to envelop. Jim and I used to buy a pint of oysters at Sal’s corner market when we lived in Easton, PA. We’d make a nice dinner of oyster casserole, potato, and salad. Oysters being high in iron make them a good food for pregnant women.

Rosemary Chicken
2 Broilers, cut up
1 large onion, cut in thick slices 2/3 cup ketchup
1/3 cup vinegar
4 Tablespoons margarine
1 clove garlic, crushed
1 teaspoon crushed rosemary 1 teaspoon salt
1⁄4 teaspoon dry mustard
1 clove garlic, crushed

1⁄4 teaspoon dry mustard

Place chicken skin side down in single layers in buttered shallow pan. Top with onion slices.

Mix all other ingredients in a small saucepan and heat to boiling. Pour over chicken.

Bake in hot oven. 400. For 30 minutes. Turn chicken skin side up. Baste continuously. Cook
3o minutes more or until tender and richly glazed.
Curry Turkey Salad
2 quarts ( that’s about 2 1⁄2 -3 lbs.) bite sized pieces of cooked turkey breast meat 1 large can (20 oz.) water chestnuts
2 lbs. seedless grapes
2 cups sliced celery
2-3 cups toasted slivered almonds 3 cups mayonnaise
1 tablespoon curry powder
2 tablespoons soy sauce

Combine the turkey, water chestnuts, grapes, celery, 1 1⁄2 cups of the almonds. Mix the mayonnaise with curry powder, soy sauce, and lemon juice. Add to turkey mixture and chill for several hours. Spoon onto a bed of lettuce leaves. Sprinkle with remaining almonds and serve pineapple chunks or litchi nuts alongside. Serves 12 generously.

mixture cool about one hour. Place in two 9 inch pie plates lined with pastry,
cover with top crust. Bake in hot oven 400 for 30 minutes. Pies may be frozen
before baking or filling may be frozen and made into pies later.

Buttons and Bows Stew
1 1⁄2 lb. stew beef 2 tablespoons oil salt & pepper carrots
seasoned flour
2 chopped onions
water

In a small brown paper bag, shake 1 1⁄2 lbs. stew beef chunks in seasoned flour.
Brown meat in hot fat. Put water to cover meat and add 2 chopped onions, salt,
and pepper. Cook 1 1⁄2 hours till tender. Add carrots which have been cut like
buttons and cook a little longer for carrots to be cooked. Remove form heat. Add
cooked BOW macaroni to the pot. Toss lightly. Serve hot.

Meat Loaf
1 lb. sausage meat 1 lb. ground beef 1 egg, beaten ketchup
1 1⁄2 teaspoons salt
2 slices bread crumbled
1 1⁄2 cup mashed potatoes 1⁄2 small onion chopped

Mix all ingredients together. Shape into a round. Coat top with ketchup. Place in
slow cooker. Pour 1 lb. frozen tiny peas around the loaf. Pour in 1 small can of
whole potatoes including liquid. (or left over potatoes) Cook on HIGH for 1 hour
then turn to LOW for 8-9 hours.

Centre Farm Stuffed Clams
Mix: 1 can minced clams and juice margarine
1⁄2 cup of melted

Sauté:2 cups chopped green peppers 1 cup chopped celery

Cook 1 lb. broad noodles. Combine with meat sauce. Place in a 14x10x2” pan. Sprinkle with cheese. Bake 350 for 35 minutes. Serves 12.

Cut the elephant into small cubes. This should take about two months. Add enough
brown gravy to cover. Cook over kerosene fire about four weeks at 4650 F. This
will serve 3800 people.

1 small onion, finely chopped 1⁄2 lb. cooked haddock, flaked
2 hard cooked eggs, whites chopped, yolks
salt and cayenne pepper chopped parsley

Bring 1 pint salted water to boil in a large saucepan; shower in rice; bring to boil again.
Cover; cook over low heat until water is absorbed.

2 cups dried black beans
1⁄4 cup bacon

Pick over beans and wash them well. Soak over night. The next day, turn up the heat, skim foam
off the top when it comes to a boil, then turn heat low and cook, uncovered, 2 hours or so – just
until they start to become tender. Drain beans.
Add bacon, onion, garlic, coriander, chili powder, bay leaves, and salt and pepper to taste. Then add stock and enough water to just cover beans. Bring to a boil; turn down heat, simmer, covered, another 2 hours. After 1 hour check beans, and if they have a lot of liquid, uncover pot. When done, the beans will have started to disintegrate, so the pot is part whole, part creamy beans, and all the liquid should be absorbed.
To serve, cook 1⁄2 cup of rice in 1 cup of salted water for each person. On each plate made a ring of rice (the Christians) and ladle the Moors into the middle. Place a dollop of sour cream on top of the beans and garnish with sprigs of coriander. Serve with chutney if you wish.

Rowland Creamed Spinach Ring with Mushrooms
Cook 10 packages spinach till almost done. Drain in colander for 1/2 hour.
Add to cooked drained spinach 1/2 pound butter, salt, pepper & 1-teaspoon garlic salt.
Mix well into hot spinach. Then sift 3-4 Tablespoons flour while stirring into the spinach mixture. (It helps to have two people working at this point). Add 1-cup light cream. Mix in with some hot spinach water (reserved from draining the cooked spinach). Grate in 1-tablespoon onion. Be sure it is good and hot. Then pack in circular mold. Freeze it or refrigerate at least overnight until ready to cook it. To cook it, place mold in pan of water and cook in oven for 30 - 45 minutes. Turn onto plate and fill middle of ring with mushroom sauce. (Sautéed mushrooms)
We also call this "Teeny's Thanksgiving Spinach" because she made it every year. She learned it from her grandmother, Susie North Rowland. We Watsons have been making this every Thanksgiving and bringing it to Centre Farm for the feast.
Rowland Sweet Potato Pie
Drain heavy syrup from 3 large cans of sweet potatoes.
Put potatoes in pan with 1/4-cup margarine. Mash with potato masher on top of stove. Add 1/4 cup concentrated orange juice.
Add:
1 tablespoon molasses
1 teaspoon each of ground cloves, ginger, nutmeg 1/2 cup brown sugar
Stir. Add any of drained syrup you want to make it as smooth as you desire. Put in a pie dish. Heat to serve. Then cover the top with marshmallows.
Cook quickly under broiler watching every second! Serve hot.

Red Cabbage
1 medium size red cabbage, shredded 4 tablespoons cider vinegar
4 tablespoons brown sugar
1 onion
2 tablespoons margarine little flour
Melt margarine. Brown onion until soft. Sprinkle a little flour over onions. (Makes sort of a
brown roux) Add shredded cabbage. Cook over low heat until almost soft. Add water when
necessary. When almost soft, add apple cut up in small pieces. Continue cooking on low until
apple and cabbage are soft. Cooking time: 1-2 hours!

Creole Eggplant
3 medium eggplants, peeled and cubed 1⁄2 cup bell pepper, chopped
1⁄2 cup onion, minced
1 can tomatoes
Parmesan cheese

1 cup corn flakes

4 tablespoons bacon drippings

Parmesan cheese. Bake 325o F for 30 minutes. 8 servings.

1 box Jiffy corn muffin mix (or dry ingredients of corn muffin recipe) 1 16 oz. can whole corn with juice
1 16 oz. can cream corn
1 cup plain yogurt (or sour cream)
1 stick margarine or butter
Mix all ingredients in a mixing bowl. Pour into a shallow 2 qt. baking dish. Bake uncovered at 350o for 45-50 minutes.
It figures that this southern recipe would be Simon’s favorite now that he lives in
Atlanta, GA. Meme usually makes this to accompany our lobster feast every Christmas Eve. Whenever she serves it, people always ask; “What is in this delicious dish?”.

Snappy Vegetable Medley
1/3-cup brown sugar
2/3 cup cider vinegar
2/3 cup vegetable oil
salt & pepper to taste
1 lb. canned green beans, drained
1 lb. canned corn, drained
1 large onion, chopped
2 cucumbers, chopped
2 tomatoes, chopped

4 medium zucchini
2 tablespoon flour
1/4 lb. butter, separated

Mix all ingredients together and place in an oiled soufflé dish or spring form pan. Bake at 350o F
for at least 40 minutes until the soufflé is brown around the edges.

bit course. Cut up onion fine. In a large skillet, fry onion in half of butter until
soft. Add grated zucchini. Cook until soft. Add flour and stir until smooth. Add
milk, stir and sest aside. Grease baking dish with butter. Pour in zucchini mixture
and sprinkle with bread crumbs and dot with butter. Bake at 350o for 20 minutes or
until brown.

Craftsbury Common Tomato Soup
1 head garlic, chopped
1 tablespoon olive oil
1 small hand full of dried tarragon slivers
Water
1 can whole tomatoes
6 vine ripe tomatoes
1⁄2 lb. mozzarella, cut into (fresh cheese is best)

Sauté garlic in pot. Add chopped tomatoes, then canned tomatoes. Add tarragon
and about half of the slivered cheese. Add enough water to make it look like soup.

Radiatore Garden Salad
1 (12 oz.) package Prince Radiatore, uncooked 2 medium tomatoes, chopped
leaves
1 (12 oz.0 can whole kernel corn, drained
1 cup crumbled Feta cheese 1⁄2 cup chopped red onion
1⁄2 cup sliced ripe olives
1 teaspoon dried basil
2tablespoons parsley 3⁄4 cup bottled Italian salad dressing

Cook noodles as package directs; drain. In a large bowl combine all ingredients

1 can white cannelloni beans

2 tablespoons chopped fresh cilantro 10 cup finely shredded romaine lettuce

3⁄4 cup sliced scallions

Toss vegetables with sauce in salad bowl.

bowl with the lettuce, spoon the bean mixture into center & serve.

Scottish Oatcakes
1 1/4 cup white sugar
2 cups rolled oats
2 cups flour
1 teaspoon baking powder 1 teaspoon salt
1 1/4 cup shortening (Crisco)
1/2 teaspoon baking soda
1/2 cup boiling water
2 cups Bran Flakes (Kelloggs cereal type)

Crust:

Remove 3 Tablespoons of this mixture and add it to 2 Tablespoons chocolate syrup. Sprinkle bottom of pan with 1/2 cup nuts. Pour 1/2 cup batter over nuts. Then chocolate mixture, then batter, then 1/2 cup coconut.
Bake for 1 hour at 325 degrees on second shelf of oven. Use a "Bunt" pan or round pan with hole in center like an angel food cake pan.

Make a shell. Mix into a dough:
1 1/3 cup flour
2 Tablespoons sugar

1 stick unsalted butter
1 large egg yolk beaten with 1 1/2 Tablespoon cold water adding more cold water if necessary.

for 10 - 15 minutes.

I saw her 3 months pregnant stirring a big pot of stew at the stove and said to her; “Tara you look exactly like Mom. That’s how I saw Mom all the time while I was growing up.” Tara laughed and replied; “Not my mother! My mother was a socialite getting dressed up and going out every night.” I guess that’s one difference between the third oldest and the second youngest of eleven kids. I think we all do have our own view of who Mom and Dad are. Interesting!
Bake 15-20 minutes at 400. Cut into pie wedge. Cut in half. Spread with butter. Fill with fruit pieces or berries. Top with whipped cream.

Caramel Cake
2 cups flour
2 teaspoons baking powder pinch salt
2 tablespoons cocoa
1 teaspoon vanilla

Strawberry Merringue Pie Alla Lido
Twelve 2-inch square saltine crackers (unsalted tops) 3 egg whites, at room temperature
1⁄4 teaspoon cream of tarter
1/8 teaspoon salt
1 cup granulated sugar, divided 1 teaspoon vanilla
1⁄2 cup chopped pecans
4 oz.sweet cooking chocolate 1 tablespoon butter
4 cups hulled strawberries
1 cup heavy cream whipped with 2 tbsp. confect. sugar

Serve often with tea or coffee at the kitchen table.
With rolling pin coarsely crush crackers in plastic food bag. Sprinkle 2 tablespoons cracker
crumbs on bottom of well-greased 9 inch pie plate; reserve remaining crumbs. In small deep
bowl beat egg whites until foamy; add cream of tartar and salt. Beat until soft peaks form.
Gradually beat in granulated sugar 1 tablespoon at a time, beating until very stiff and sugar is
completely dissolved. Beat in vanilla just until blended. Fold in pecans and remaining cracker
crumbs. With spatula spread over bottom and up sides of prepared pie plate, pushing up sides
slightly above rim of pie plate to form a shell. Bake in preheated 325o oven 30 minutes or until
golden and hard to the touch. Cool on wire wrack (shell will crack slightly on cooling). In small
saucepan over low heat melt chocolate with butter; stir to blend. With metal spoon drizzle
chocolate mixture all over cooled meringue shell; let set at least 15 minutes. Reserving 2 whole
strawberries for garnish, cut remaining berries in half, larger ones in quarters. Spoon into pie
shell. Top with dollops of whipped cream. Garnish with whole berries. Chill until serving time.
Best served same day; cut in wedges to serve. (pie will crumble slightly)

1 cup flour
1⁄2 teaspoon vanilla
2 tablespoons cinnamon
1⁄4 lb. butter

1 cup canned crushed pineapple

1⁄2 cup nuts, not chopped fine
Put batter in a circular pan with a hole in the middle. Grease the pan! Bake 350o for 1 hour. Frost with Cream Cheese Frosting. ( Mix: 2 tsp. vanilla,1/4 cup margarine, 6 oz. cream cheese, 1 box confectioner’s sugar, enough milk to make frosting creamy to spread.)

1 egg
plain yogurt
1 cup sugar
1 1⁄2 cups flour
cinnamon
1 1⁄2 teaspoons baking powder

Break egg in measuring cup and fill with plain yogurt. Mix sugar, flour, baking
powder and salt. Stir wet and dry ingredients together until no longer lumpy. Put
mixture in deep 9 ‘ pie plate and dot generously with butter. Cover with brown
sugar (at least 1⁄2 cup) and sprinkle cinnamon over all. Bake 350o oven for 20 – 30
minutes. Freezes well.

Indian Pudding
1⁄4 cup corn meal 1 teaspoon ginger 1 teaspoon salt dash cinnamon
dash cloves
1 2/3 cup evaporated milk
1 2/3 cup water 1⁄4 cup molasses
1 2/3 cup evaporated milk

Mix meal, salt, spices, add milk to moisten. Scald remainder of milk
with water. Add meal and molasses to scalded milk. Pour into buttered baking dish. Bake in slow oven 2 - 2 1⁄2 hours. Stir occasionally. 6-8 servings.
Warm Indian Pudding is delicious with vanilla ice cream. Meme always serves this at Thanksgiving along with the umteen other desserts. Indian Pudding is usually my choice.
